Ingredients
  • 1 cup Quinoa
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 0.5 cup Fresh parsley
  • 0.5 cup Fresh mint
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring 2 cups of water to a boil and add the rinsed quinoa. Reduce heat, cover, and simmer for 15 minutes or until the water is absorbed.
  3. Meanwhile, chop the cucumber, cherry tomatoes, red onion, parsley, and mint.
  4. In a large bowl, combine the cooked quinoa, chopped vegetables, lemon juice, olive oil, salt, and black pepper. Mix well.
  5. Let the salad rest in the refrigerator for at least 30 minutes to allow the flavors to blend.
  6. Serve chilled and enjoy!
