  • 1 cup Pumpkin puree
  • 1 unit Egg
  • 1 cup Almond milk
  • 2 tablespoon Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 cup Whole wheat flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Pumpkin spice
  • 1 pinch Salt
  • 1 teaspoon Coconut oil
Instructions
  1. In a large bowl, whisk together the pumpkin puree, egg, almond milk, maple syrup, and vanilla extract.
  2. In a separate bowl, combine the whole wheat flour, baking powder, pumpkin spice, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with coconut oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes.
