  • 3 tablespoon Unsweetened cocoa powder
  • 1/2 cup Peanut butter
  • 1/4 cup Honey
  • 1/2 teaspoon Vanilla extract
  • 1/8 pinch Salt
  • 1/4 cup Unsweetened shredded coconut
  • 1/4 cup Chopped nuts (e.g., almonds, walnuts)
Instructions
  1. In a large bowl, combine rolled oats and cocoa powder.
  2. In a small saucepan, heat peanut butter, honey, vanilla extract, and salt over low heat until melted and well combined.
  3. Pour the peanut butter mixture over the oats and cocoa powder. Stir until all ingredients are evenly coated.
  4. Let the mixture rest for 5 minutes to cool slightly.
  5. Shape the mixture into small cookies using your hands or a cookie scoop.
  6. Roll each cookie in shredded coconut and chopped nuts.
  7. Place the cookies on a baking sheet lined with parchment paper.
  8. Refrigerate for at least 30 minutes to set.
