Yams are often confused with sweet potatoes, but they are actually two different vegetables. Yams have a rough, bark-like skin and a starchy, sweet flesh, while sweet potatoes have a thin, edible skin and a moist, sweet flesh.
This is vegan and gluten free recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 7.

Preheat the oven to 400°F (200°C).

Peel and cut the yams into 1-inch cubes.

In a large bowl, toss the yams with olive oil, maple syrup, cinnamon, and salt until well coated.

Spread the yams in a single layer on a baking sheet.

Bake for 30-35 minutes, or until the yams are tender and golden brown, stirring once halfway through.

Meanwhile, toast the pecans in a dry skillet over medium heat until fragrant, about 5 minutes. Let them cool, then chop them.

Remove the yams from the oven and let them rest for 5 minutes.

Transfer the yams to a serving dish and sprinkle with chopped pecans and fresh rosemary.
