Ingredients
  • 4 cup Mixed salad greens
  • 1 cup Butternut squash
  • 0.5 cup Pomegranate seeds
  • 2 oz Goat cheese
  • 0.25 cup Pecans
  • 4 tbsp Balsamic vinaigrette
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the butternut squash.
  3. Toss the diced butternut squash with olive oil, salt, and pepper.
  4. Roast the butternut squash in the preheated oven for 20 minutes or until tender.
  5. In a large salad bowl, combine the mixed salad greens, roasted butternut squash, pomegranate seeds, crumbled goat cheese, and pecans.
  6. Drizzle the balsamic vinaigrette over the salad.
  7. Toss the salad gently to combine all the ingredients.
  8. Serve immediately and enjoy!
