Ingredients
  • 1 cup Lentils
  • 1 cup Chickpeas
  • 1 large Onion
  • 3 clove Garlic cloves
  • 2 stalk Celery stalks
  • 2 medium Carrots
  • 1 can Canned tomatoes
  • 2 tablespoon Tomato paste
  • 1 bunch Cilantro
  • 1 bunch Parsley
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoon Olive oil
  • 6 cup Water
Instructions
  1. In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, chopped celery, and diced carrots. Cook until vegetables are softened.
  2. Add lentils, chickpeas, canned tomatoes, tomato paste, turmeric, cumin, cinnamon, salt, and pepper to the pot. Stir well.
  3. Pour in water and bring the soup to a boil. Reduce heat and simmer for 1 hour.
  4. Chop cilantro and parsley. Add them to the pot and cook for an additional 10 minutes.
  5. Remove from heat and let the soup rest for a few minutes before serving.
  6. Serve hot with crusty bread.
