Ingredients
  • 200 gram Spinach
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Potato
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
Instructions
  1. Heat olive oil in a pot and sauté the onion and garlic until translucent.
  2. Add the potato and vegetable broth, bring to a boil, and simmer for 15 minutes or until the potato is tender.
  3. Add the spinach and cook for an additional 5 minutes.
  4. Use an immersion blender or a regular blender to puree the soup until smooth.
  5. Season with salt, black pepper, and lemon juice.
