Ingredients
  • 4 slice Whole wheat bread
  • 1 medium Avocado
  • 4 slice Tomato
  • 4 slice Red onion
  • 1 handful Baby spinach
  • 2 tablespoon Vegan mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 pinch Salt
  • 1 pinch Black pepper
Instructions
  1. Toast the bread slices.
  2. Mash the avocado in a bowl and season with salt and black pepper.
  3. Spread vegan mayonnaise on two slices of bread and Dijon mustard on the other two slices.
  4. Layer the mashed avocado, tomato slices, red onion slices, and baby spinach on one slice of bread.
  5. Top with the remaining slice of bread.
  6. Cut the sandwich in half and serve.
