Ingredients
  • 1 cup Bulgur
  • 2 cups Water
  • 1 teaspoon Salt
  • 2 cups Corn kernels
  • 1 cup Fresh basil leaves
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Black pepper
Instructions
  1. In a saucepan, bring water to a boil. Add bulgur and salt, cover, and simmer for 15 minutes or until tender.
  2. In a separate pan, sauté corn kernels in olive oil until lightly browned.
  3. In a bowl, combine the sautéed corn, chopped basil leaves, lemon juice, olive oil, salt, and black pepper.
  4. Fluff the cooked bulgur with a fork and divide into serving bowls.
  5. Top the bulgur with the corn-basil relish.
  6. Let the flavors meld for 5 minutes before serving.
