Ingredients
  • 200 gram Bell peppers
  • 150 gram Zucchini
  • 150 gram Eggplant
  • 100 gram Red onion
  • 2 teaspoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 piece Bread slices
  • 4 tablespoon Hummus
  • 50 gram Baby spinach
Instructions
  1. Preheat the grill.
  2. Slice the bell peppers, zucchini, eggplant, and red onion into thick slices.
  3. Drizzle the vegetables with olive oil and season with salt and black pepper.
  4. Grill the vegetables for 3-4 minutes on each side until they are tender and slightly charred.
  5. Toast the bread slices.
  6. Spread hummus on one side of each bread slice.
  7. Layer the grilled vegetables and baby spinach on top of the hummus.
  8. Close the sandwich with another bread slice.
  9. Cut the sandwich in half and serve.
