  • 2 cup Zucchini
  • 1 cup Yellow bell pepper
  • 1 cup Red bell pepper
  • 1 cup Red onion
  • 1 cup Cherry tomatoes
  • 2 tablespoon Olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Fresh basil leaves
Instructions
  1. Preheat the grill to medium-high heat.
  2. Cut the zucchini, bell peppers, and red onion into thick slices.
  3. In a large bowl, toss the vegetables with olive oil, balsamic vinegar, salt, and black pepper.
  4. Grill the vegetables for 4-5 minutes on each side, or until they are tender and slightly charred.
  5. Remove the vegetables from the grill and let them rest for 5 minutes.
  6. Chop the grilled vegetables into bite-sized pieces and transfer them to a serving bowl.
  7. Add the cherry tomatoes and fresh basil leaves to the bowl.
  8. Drizzle with additional olive oil and balsamic vinegar if desired.
  9. Toss gently to combine.
  10. Serve the grilled vegetable salad immediately.
