Ingredients
  • 200 gram Bell peppers
  • 150 gram Zucchini
  • 150 gram Eggplant
  • 200 gram Cherry tomatoes
  • 100 gram Red onion
  • 2 teaspoon Olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 20 gram Fresh basil leaves
Instructions
  1. Preheat the grill.
  2. Slice the bell peppers, zucchini, and eggplant into thick slices.
  3. Halve the cherry tomatoes and thinly slice the red onion.
  4. In a bowl, toss the sliced vegetables with olive oil, balsamic vinegar, salt, and black pepper.
  5. Grill the vegetables for about 5 minutes on each side until they are tender and have grill marks.
  6. Remove the vegetables from the grill and let them rest for 5 minutes.
  7. Arrange the grilled vegetables on a serving platter and garnish with fresh basil leaves.
