Ingredients
  • 1 cup Quinoa
  • 1 large Bell Pepper
  • 1 small Zucchini
  • 1 small Red Onion
  • 1 cup Cherry Tomatoes
  • 2 tablespoon Olive Oil
  • 2 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Parsley
  • 2 tablespoon Basil
  • 2 tablespoon Mint
  • 2 tablespoon Feta Cheese (optional)
Instructions
  1. Cook quinoa according to package instructions.
  2. Preheat grill to medium-high heat.
  3. Slice bell pepper, zucchini, and red onion.
  4. Toss the sliced vegetables with olive oil, salt, and black pepper.
  5. Grill the vegetables until charred and tender.
  6. In a large bowl, combine cooked quinoa, grilled vegetables, cherry tomatoes, lemon juice, parsley, basil, and mint.
  7. Season with additional salt and black pepper to taste.
  8. Optional: Sprinkle feta cheese on top.
  9. Let the salad rest for 5 minutes.
