Ingredients
  • 1 cup Bell peppers
  • 2 medium Zucchini
  • 1 medium Eggplant
  • 1 small Red onion
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 4 tablespoon Mayonnaise
  • 2 tablespoon Lemon juice
  • 1 teaspoon Hot sauce
  • 1 loaf French bread
  • 4 piece Lettuce leaves
  • 4 piece Tomato slices
Instructions
  1. Preheat the grill to medium-high heat.
  2. Slice the bell peppers, zucchini, eggplant, and red onion into thin strips.
  3. In a bowl, combine olive oil, salt, black pepper, and garlic powder.
  4. Toss the sliced vegetables in the olive oil mixture until well coated.
  5. Grill the vegetables for about 5-7 minutes per side, or until they are tender and slightly charred.
  6. In a small bowl, mix mayonnaise, lemon juice, and hot sauce to make a spicy mayo.
  7. Slice the French bread into individual sandwich-sized portions.
  8. Spread the spicy mayo on one side of each bread slice.
  9. Layer grilled vegetables, lettuce leaves, and tomato slices on one side of the bread.
  10. Top with the other bread slice.
  11. Serve the Grilled Vegetable Po'boys immediately and enjoy!
