Tostones are a popular dish in Latin American cuisine and are made from green plantains that are fried or grilled and then flattened.

Grilled Tostones with Black Bean and Corn Relish

Preheat grill to medium-high heat.

Peel the plantains and cut them into 1-inch thick slices.

Brush the plantain slices with olive oil.

Grill the plantain slices for about 2-3 minutes per side, until they are golden brown and slightly charred.

Remove the plantain slices from the grill and flatten them with a tostonera or the bottom of a heavy glass.

Return the flattened plantains to the grill and cook for an additional 2-3 minutes per side.

In a mixing bowl, combine the black beans, corn kernels, diced red bell pepper, diced red onion, chopped cilantro, lime juice, salt, and black pepper.

Mix well to combine all the ingredients.

Serve the grilled tostones with the black bean and corn relish on top.
