Ingredients
  • 500 gram Sweet Potatoes
  • 2 teaspoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Cilantro
  • 2 tablespoon Lime Juice
  • 2 clove Garlic
Instructions
  1. Preheat grill to medium-high heat.
  2. Slice sweet potatoes into 1/4-inch thick rounds.
  3. In a bowl, combine olive oil, salt, and black pepper. Toss sweet potato slices in the mixture until well coated.
  4. Grill the sweet potato slices for about 4-5 minutes per side, or until tender and grill marks appear.
  5. In a blender, combine cilantro, lime juice, garlic, salt, and pepper. Blend until smooth.
  6. Serve the grilled sweet potato slices with the cilantro-lime dressing drizzled on top.
