Ingredients
  • 500 gram Sweet potatoes
  • 1 bunch Scallions
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the grill to medium heat.
  2. Peel and slice the sweet potatoes into 1/4-inch thick rounds.
  3. Brush the sweet potato slices with olive oil and season with salt and black pepper.
  4. Grill the sweet potato slices for 4-5 minutes per side, until tender and grill marks appear.
  5. Meanwhile, thinly slice the scallions.
  6. In a small bowl, whisk together the lemon juice, honey, olive oil, salt, and black pepper to make the dressing.
  7. Once the sweet potatoes are grilled, transfer them to a serving platter.
  8. Drizzle the dressing over the sweet potatoes and sprinkle the sliced scallions on top.
  9. Let the salad rest for 5 minutes to allow the flavors to meld.
