Ingredients
  • 2 piece Red Bell Peppers
  • 1 pound Potatoes
  • 1 small Red Onion
  • 2 tablespoon Olive Oil
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Fresh Parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the grill to medium-high heat.
  2. Cut the red bell peppers in half, remove the seeds, and brush them with olive oil.
  3. Grill the peppers for about 5-7 minutes per side, until they are charred and tender. Remove from the grill and let them cool.
  4. Meanwhile, boil the potatoes until tender. Drain and let them cool.
  5. Once the peppers are cool enough to handle, peel off the charred skin and slice them into thin strips.
  6. In a large bowl, combine the sliced peppers, diced potatoes, chopped red onion, olive oil, lemon juice, parsley, salt, and black pepper.
  7. Toss everything together until well combined.
  8. Let the salad rest for about 10 minutes to allow the flavors to meld.
  9. Serve the grilled red pepper potato salad chilled or at room temperature.
