Ingredients
  • 1 pound Potatoes
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 piece Jalapeno peppers
  • 2 piece Garlic cloves
  • 1 cup Fresh basil leaves
  • 2 tablespoon Pine nuts
  • 2 tablespoon Parmesan cheese
  • 1 tablespoon Lemon juice
Instructions
  1. Preheat the grill to medium-high heat.
  2. Slice the potatoes into 1/4-inch thick rounds.
  3. In a bowl, toss the potato slices with olive oil, salt, and black pepper.
  4. Grill the potato slices for 3-4 minutes per side, until they are tender and have grill marks.
  5. In a food processor, combine jalapeno peppers, garlic cloves, basil leaves, pine nuts, Parmesan cheese, and lemon juice. Process until smooth.
  6. Serve the grilled potatoes with the jalapeno pesto sauce on top. Enjoy!
