Ingredients
  • 1 cup Quinoa
  • 2 ear Corn
  • 1 large Avocado
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 1 bunch Cilantro
  • 2 juice of Lime
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cook quinoa according to package instructions.
  2. Preheat grill to medium-high heat. Grill corn until charred, about 10 minutes. Let cool and cut kernels off the cob.
  3. Dice avocado, red bell pepper, and red onion. Chop cilantro.
  4. In a large bowl, combine cooked quinoa, grilled corn, diced avocado, diced red bell pepper, diced red onion, and chopped cilantro.
  5. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
  6. Pour dressing over the quinoa salad and toss to combine.
  7. Let the salad rest for 10 minutes to allow the flavors to meld.
  8. Serve and enjoy!
