Ingredients
  • 2 medium-sized Zucchini
  • 2 large Bell peppers
  • 1 small Red onion
  • 1 cup Cherry tomatoes
  • 3 tablespoon Balsamic vinegar
  • 2 tablespoon Olive oil
  • 2 clove Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • optional for garnish Fresh basil leaves
Instructions
  1. Preheat the grill to medium-high heat.
  2. Slice the zucchini, bell peppers, and red onion into thick slices.
  3. In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and black pepper.
  4. Brush the vegetable slices with the balsamic mixture.
  5. Place the vegetables on the grill and cook for about 5-7 minutes per side, or until they are tender and slightly charred.
  6. Remove the vegetables from the grill and let them rest for 5 minutes.
  7. Garnish with fresh basil leaves, if desired.
  8. Serve hot as a side dish or as an appetizer.
