Ingredients
  • 1 cup Basmati Rice
  • 1 bunch Spinach
  • 1/2 cup Cilantro
  • 1/4 cup Mint Leaves
  • 2 number Green Chilies
  • 3 cloves Garlic
  • 1 inch Ginger
  • 1 number Lemon
  • 1/2 teaspoon Salt
  • 1 tablespoon Ghee
Instructions
  1. Wash and soak the basmati rice for 30 minutes.
  2. Bring a pot of water to boil and cook the spinach for 5 minutes.
  3. Drain the spinach and transfer to a blender along with cilantro, mint leaves, green chilies, garlic, ginger, lemon juice, and salt. Blend until smooth.
  4. Heat ghee in a pan and fry the rice for a few minutes.
  5. Add the spinach puree to the rice and mix well.
  6. Add water in a 1:2 ratio to the rice and bring to a boil.
  7. Reduce the heat, cover the pan, and let the rice cook for 15-20 minutes.
  8. Once cooked, fluff the rice with a fork and let it rest for 5 minutes before serving.
