Ingredients
  • 2 cup Kale
  • 2 medium-sized Potatoes
  • 1 small Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
  3. Stir in chopped kale, lemon juice, salt, and black pepper. Cook for an additional 5 minutes.
  4. Remove from heat and let the soup rest for 5 minutes.
  5. Use an immersion blender or regular blender to puree the soup until smooth.
  6. Serve hot and garnish with a drizzle of olive oil and freshly ground black pepper.
