Ingredients
  • 4 cloves Green Garlic
  • 2 medium Potatoes
  • 2 large Leeks
  • 4 cups Vegetable Stock
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 sprigs Fresh Thyme
  • 1 cup Coconut Milk
  • 2 tablespoons Chives
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped green garlic and leeks, and sauté until softened.
  2. Add diced potatoes, vegetable stock, salt, and black pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Remove from heat and let cool slightly. Use an immersion blender to puree the soup until smooth.
  4. Return the pot to low heat and stir in coconut milk. Cook for a few more minutes until heated through.
  5. Serve hot, garnished with fresh thyme and chopped chives.
