Ingredients
  • 400 gram Green beans
  • 200 gram Cherry tomatoes
  • 100 gram Red onion
  • 100 gram Feta cheese
  • 50 gram Black olives
  • 20 gram Fresh parsley
  • 2 teaspoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Bring a pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until crisp-tender. Drain and rinse under cold water.
  2. In a large bowl, combine the blanched green beans, cherry tomatoes, red onion, feta cheese, black olives, and fresh parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to make the dressing.
  4. Pour the dressing over the salad and toss to coat.
  5. Let the salad marinate for 10 minutes before serving.
  6. Serve chilled and enjoy!
