Ingredients
  • 250 gram Green beans
  • 200 gram Cherry tomatoes
  • 100 gram Red onion
  • 100 gram Feta cheese
  • 50 gram Kalamata olives
  • 30 gram Fresh parsley
  • 2 teaspoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Bring a pot of water to boil and blanch the green beans for 2 minutes. Drain and rinse with cold water.
  2. In a large bowl, combine the blanched green beans, cherry tomatoes, red onion, feta cheese, Kalamata olives, and fresh parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Let the salad marinate for at least 10 minutes before serving.
  6. Serve chilled and enjoy!
