Ingredients
  • 15 ounce Canned chickpeas
  • 1 cup Cucumber
  • 1 cup Tomatoes
  • 1 cup Red onion
  • 1 cup Kalamata olives
  • 1 cup Feta cheese
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Extra virgin olive oil
  • 2 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Rinse and drain the canned chickpeas.
  2. Chop the cucumber, tomatoes, red onion, and parsley.
  3. In a large bowl, combine the chickpeas, cucumber, tomatoes, red onion, kalamata olives, feta cheese, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve chilled and enjoy!
