Ingredients
  • 2 cup Great Northern Beans
  • 4 cups Vegetable Broth
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery Stalks
  • 3 cloves Garlic Cloves
  • 2 tablespoon Tomato Paste
  • 1 teaspoon Dried Thyme
  • 2 leaf Bay Leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 2 tablespoon Fresh Parsley
Instructions
  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are tender.
  2. Add tomato paste, dried thyme, bay leaves, salt, and black pepper. Stir well.
  3. Add Great Northern beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Remove bay leaves and garnish with fresh parsley before serving.
