Ingredients
  • 1.5 cup Graham cracker crumbs
  • 5 tablespoon Coconut oil
  • 3 tablespoon Agave syrup
  • 2 teaspoon Grapefruit zest
  • 0.5 cup Grapefruit juice
  • 2 tablespoon Cornstarch
  • 3 tablespoon Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 2 tablespoon Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a square baking dish.
  2. In a medium bowl, combine graham cracker crumbs, melted coconut oil, and agave syrup. Press the mixture evenly into the bottom of the prepared baking dish.
  3. Bake the crust in the preheated oven for 10 minutes, then remove and set aside.
  4. In a saucepan, whisk together grapefruit zest, grapefruit juice, cornstarch, maple syrup, vanilla extract, and salt. Cook over medium heat, stirring constantly until the mixture thickens, about 5 minutes.
  5. Pour the grapefruit filling over the crust and spread it evenly.
  6. Bake for 15 minutes, or until the filling is set.
  7. Remove from the oven and let cool completely in the baking dish.
  8. Once cooled, refrigerate for at least 1 hour.
  9. Sprinkle powdered sugar on top before serving.
  10. Cut into bars and enjoy!
