Ingredients
  • 500 gram Broccoli
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Coconut milk
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic, and cook until onions are translucent.
  2. Add broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until broccoli is tender.
  3. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  4. Stir in coconut milk and season with salt and black pepper to taste. Simmer for another 5 minutes.
  5. Serve hot and enjoy!
