Ingredients
  • 15 ounce Canned chickpeas
  • 1 cup Red bell pepper
  • 1/2 cup Red onion
  • 1/2 cup Cucumber
  • 1/2 cup Cherry tomatoes
  • 1/4 cup Fresh parsley
  • 1/4 cup Black olives
  • 1/2 cup Feta cheese
  • 2 tablespoon Extra virgin olive oil
  • 2 tablespoon Lemon juice
  • 1 clove Garlic
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Rinse and drain the canned chickpeas.
  2. Chop the red bell pepper, red onion, cucumber, cherry tomatoes, fresh parsley, and black olives.
  3. In a large mixing bowl, combine the chickpeas, chopped vegetables, and crumbled feta cheese.
  4. In a small bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, salt, and black pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled and enjoy!
