Ingredients
  • 200 gram Goya (Okinawan Bitter Melon)
  • 250 gram Somen Noodles
  • 200 gram Firm Tofu
  • 2 count Eggs
  • 1 count Onion
  • 2 clove Garlic
  • 4 teaspoon Soy Sauce
  • 1 teaspoon Salt
  • 2 teaspoon Sesame Oil
  • 1 tablespoon Vegetable Oil
  • 2 count Green Onion (Scallion)
  • 1 teaspoon Black Pepper
Instructions
  1. Slice the goya (bitter melon) and sprinkle with salt. Let it sit for 10 minutes and then squeeze out the bitter juice.
  2. Boil the somen noodles according to the package instructions. Drain and set aside.
  3. In a frying pan, heat vegetable oil and sesame oil over medium heat. Add minced garlic and sliced onion. Stir-fry until fragrant.
  4. Add the goya slices and stir-fry for a few minutes until they become tender.
  5. Dice the firm tofu and add it to the pan. Stir-fry for another 2 minutes.
  6. Push the ingredients to one side of the pan. Crack the eggs into the empty space. Scramble the eggs and mix with the other ingredients.
  7. Add the cooked somen noodles to the pan. Drizzle soy sauce over the mixture. Stir-fry until everything is well combined.
  8. Season with salt and black pepper to taste.
  9. Garnish with sliced green onions.
  10. Serve hot and enjoy!
