Ingredients
  • 500 gram Tomatoes
  • 250 gram Cucumber
  • 200 gram Yellow bell pepper
  • 100 gram Red onion
  • 2 piece Garlic cloves
  • 4 tablespoon Extra virgin olive oil
  • 2 tablespoon White wine vinegar
  • 1 teaspoon Salt
  • 1 pinch Black pepper
  • 20 gram Fresh basil leaves
  • 4 piece Croutons
Instructions
  1. Roughly chop tomatoes, cucumber, yellow bell pepper, red onion, and garlic cloves.
  2. In a blender, combine the chopped vegetables, olive oil, white wine vinegar, salt, and black pepper. Blend until smooth.
  3. Transfer the mixture to a bowl and refrigerate for at least 1 hour to chill.
  4. Serve the chilled gazpacho in bowls, garnished with fresh basil leaves and croutons.
