  • 500 gram Ripe tomatoes
  • 200 gram Cucumber
  • 150 gram Yellow bell pepper
  • 100 gram Red onion
  • 2 piece Garlic cloves
  • 1 piece Lemon
  • 1 piece Avocado
  • 2 tablespoon Extra virgin olive oil
  • 2 tablespoon White wine vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 10 gram Fresh basil leaves
Instructions
  1. In a blender, combine tomatoes, cucumber, bell pepper, red onion, garlic, lemon juice, olive oil, vinegar, salt, and black pepper. Blend until smooth.
  2. Chill the gazpacho in the refrigerator for at least 30 minutes.
  3. Cut the avocado into small cubes.
  4. Serve the chilled gazpacho in bowls, topped with avocado cubes and fresh basil leaves.
