  • 1 small Onion
  • 1 medium Carrot
  • 1 stalk Celery
  • 2 clove Garlic
  • 1 piece Bay Leaf
  • 1 teaspoon Peppercorns
  • 6 cup Water
  • 1 teaspoon Salt
  • 2 tablespoon Fresh Parsley
Instructions
  1. In a large pot, combine the vegetable off-cuts, onion, carrot, celery, garlic, bay leaf, peppercorns, and water.
  2. Bring to a boil over high heat, then reduce heat to low and simmer for 1 hour.
  3. Strain the soup through a fine mesh sieve, discarding the solids.
  4. Season with salt to taste.
  5. Serve hot, garnished with fresh parsley.
