Ingredients
  • 100 gram Goji berries
  • 150 gram Almond flour
  • 3 teaspoon Coconut oil
  • 3 teaspoon Maple syrup
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
Instructions
  1. Preheat the oven to 350°F (180°C).
  2. In a mixing bowl, combine almond flour, baking powder, and salt.
  3. In a separate bowl, mix coconut oil, maple syrup, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Gently fold in the goji berries.
  6. Line a baking sheet with parchment paper.
  7. Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them apart.
  8. Flatten each cookie slightly with the back of a spoon.
  9. Bake for 10-12 minutes, or until the edges are golden brown.
  10. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  11. Transfer the cookies to a wire rack to cool completely.
