Goji berries, also known as wolfberries, are a superfood packed with antioxidants and nutrients. They have been used in traditional Chinese medicine for centuries.

Preheat the oven to 350°F (180°C).

In a mixing bowl, combine almond flour, baking powder, and salt.

In a separate bowl, mix coconut oil, maple syrup, and vanilla extract until well combined.

Add the wet ingredients to the dry ingredients and mix until a dough forms.

Gently fold in the goji berries.

Line a baking sheet with parchment paper.

Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them apart.

Flatten each cookie slightly with the back of a spoon.

Bake for 10-12 minutes, or until the edges are golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

Transfer the cookies to a wire rack to cool completely.
