Ingredients
  • 1.5 cup Gluten-free flour
  • 3 tablespoon Cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoon Coconut oil
  • 0.5 cup Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 0.75 cup Almond milk
  • 2 tablespoon Stevia or other sugar substitute
  • 0.5 cup Dark chocolate chips
Instructions
  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a large bowl, whisk together the gluten-free flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, mix together the coconut oil, unsweetened applesauce, vanilla extract, almond milk, and stevia.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the dark chocolate chips.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
