  • 1 cup Quinoa
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 0.5 cup Fresh parsley
  • 0.5 cup Fresh mint
  • 3 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Rinse quinoa thoroughly and cook according to package instructions.
  2. In a large bowl, combine cooked quinoa, diced cucumber, halved cherry tomatoes, finely chopped red onion, chopped fresh parsley, and chopped fresh mint.
