Ingredients
  • 1 cup Quinoa
  • 1 cup Gluten-free flour
  • 2 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 2 ripe Banana
  • 0.5 cup Maple syrup
  • 0.5 cup Almond milk
  • 2 tablespoon Coconut oil
  • 1 teaspoon Vanilla extract
  • 1 cup Blueberries
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Rinse the quinoa thoroughly and cook according to package instructions.
  3. In a large bowl, mix together the cooked quinoa, gluten-free flour, baking powder, salt, and cinnamon.
  4. In a separate bowl, mash the ripe bananas. Add maple syrup, almond milk, coconut oil, and vanilla extract. Stir well.
  5. Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in the blueberries.
  6. Grease a muffin tin or line with muffin liners. Spoon the batter into the muffin cups, filling each about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely. Enjoy!
