  • 2 cup Gluten-Free Flour
  • 2 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/4 teaspoon Salt
  • 2 large Eggs
  • 1 cup Pumpkin Puree
  • 1/2 cup Honey
  • 1/2 cup Coconut Oil
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Almond Milk
  • 1/2 cup Chopped Pecans
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the gluten-free flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat the eggs, pumpkin puree, honey, coconut oil, vanilla extract, and almond milk until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the chopped pecans.
  6. Spoon the batter into a greased muffin tin, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
