  • 1 cup Gluten-Free All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Creamy Peanut Butter
  • 1/2 cup Unsalted Butter, softened
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 Egg
  • 1 teaspoon Vanilla Extract
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the gluten-free all-purpose flour, baking powder, and salt.
  3. In a separate large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until smooth and creamy.
  4. Add the egg and vanilla extract to the peanut butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  6. Roll the dough into 1-inch balls and place them on the prepared baking sheet.
  7. Flatten each ball with a fork, making a criss-cross pattern.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
