Ingredients
  • 1 cup Quinoa
  • 2 cup Water
  • 1/2 cup Dried Cranberries
  • 1/4 cup Sliced Almonds
  • 1/4 cup Fresh Parsley
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Instructions
  1. Rinse quinoa under cold water.
  2. In a saucepan, bring water to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes.
  3. Remove from heat and let it rest for 10 minutes. Fluff with a fork.
  4. In a large bowl, combine cooked quinoa, dried cranberries, sliced almonds, fresh parsley, lemon juice, olive oil, salt, and black pepper.
  5. Toss well to combine all the ingredients.
  6. Serve chilled or at room temperature. Enjoy!
