Ingredients
  • 1.5 cup Gluten-free oats
  • 1 cup Almond flour
  • 0.5 cup Coconut flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Coconut oil
  • 0.5 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.75 cup Cherry jam
  • 1 cup Fresh cherries, pitted and halved
  • 0.25 cup Sliced almonds
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine the gluten-free oats, almond flour, coconut flour, baking powder, and salt.
  3. In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Press two-thirds of the mixture into the bottom of the prepared baking dish.
  6. Spread the cherry jam over the oat mixture.
  7. Arrange the fresh cherry halves on top of the jam.
  8. Sprinkle the remaining oat mixture and sliced almonds over the cherries.
  9. Bake for 25-30 minutes, or until the edges are golden brown.
  10. Remove from the oven and let cool in the dish for 10 minutes.
  11. Transfer to a wire rack to cool completely.
  12. Cut into bars and serve.
