  • 1.5 cup Gluten-free flour blend
  • 3 tablespoon Cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Coconut oil
  • 0.75 cup Coconut sugar
  • 0.5 cup Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 0.75 cup Almond milk
  • 0.5 cup Vegan marshmallows
  • 0.5 cup Gluten-free graham cracker crumbs
  • 0.5 cup Dark chocolate chips
Instructions
  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together the gluten-free flour blend, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the coconut oil and coconut sugar until well combined.
  4. Add the unsweetened applesauce and vanilla extract to the coconut oil mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with almond milk, and mix until just combined.
  6. Fold in the vegan marshmallows, gluten-free graham cracker crumbs, and dark chocolate chips.
  7. Divide the batter evenly among the cupcake liners.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
