Ingredients
  • 3 cup Rolled oats
  • 1 cup Almonds
  • 1 cup Pecans
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground ginger
  • 1/4 teaspoon Salt
  • 2 tablespoon Coconut oil
  • 2 tablespoon Maple syrup
  • 1 tablespoon Molasses
  • 1 teaspoon Vanilla extract
  • 1/2 cup Dried cranberries
Instructions
  1. Preheat the oven to 325°F (163°C).
  2. In a large bowl, combine the rolled oats, almonds, pecans, ground cinnamon, ground ginger, and salt.
  3. In a small saucepan, melt the coconut oil over low heat. Add the maple syrup, molasses, and vanilla extract. Stir until well combined.
  4. Pour the wet mixture over the dry ingredients and mix until everything is evenly coated.
  5. Spread the mixture onto a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown.
  7. Remove from the oven and let it cool completely.
  8. Once cooled, stir in the dried cranberries.
  9. Store in an airtight container.
  10. Enjoy as a topping for yogurt, with milk, or as a snack on its own!
