Ingredients
  • 500 gram Yam
  • 2 teaspoon Ginger
  • 1 cup Onion
  • 2 cloves Garlic
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 2 tablespoon Lime Juice
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Cilantro
Instructions
  1. Peel and chop the yam into small cubes.
  2. In a large pot, heat some oil and sauté the onions, ginger, and garlic until fragrant.
  3. Add the yam cubes and vegetable stock to the pot. Bring to a boil and then reduce to a simmer for about 20 minutes or until the yam is tender.
  4. Using a blender or immersion blender, puree the soup until smooth.
  5. Stir in the coconut milk, lime juice, salt, and black pepper. Simmer for another 5 minutes.
  6. Serve the soup hot, garnished with cilantro.
