Ingredients
  • 2 teaspoon Ginger
  • 3 clove Garlic
  • 1 medium Onion
  • 2 medium Carrot
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Lime juice
  • 1 tablespoon Soy sauce
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Cilantro
Instructions
  1. Heat oil in a pot and sauté ginger, garlic, and onion until fragrant.
  2. Add carrots and cook for 5 minutes.
  3. Pour in vegetable broth and bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Stir in coconut milk, lime juice, soy sauce, salt, and black pepper.
  6. Cook for an additional 5 minutes.
  7. Remove from heat and let it rest for 5 minutes.
  8. Serve hot, garnished with cilantro.
