Peel and slice the carrots.

Heat olive oil in a pan and sauté the ginger for 1 minute.

Add the carrots and cook for 5 minutes.

Add honey, soy sauce, salt, and black pepper. Stir well.

Cover the pan and cook for another 10 minutes or until the carrots are tender.
