Ingredients
  • 1 cup Cauliflower Florets
  • 1 cup Carrot
  • 1 cup Celery Stalks
  • 1 cup Red Bell Pepper
  • 1 cup Green Bell Pepper
  • 1 cup Yellow Onion
  • 2 cloves Garlic Cloves
  • 1 cup White Vinegar
  • 1 cup Water
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Red Pepper Flakes
  • 1 teaspoon Dried Oregano
  • 2 tablespoon Olive Oil
Instructions
  1. In a large bowl, combine cauliflower florets, carrot, celery stalks, red bell pepper, green bell pepper, yellow onion, and garlic cloves.
  2. In a saucepan, bring white vinegar, water, sugar, salt, red pepper flakes, and dried oregano to a boil.
  3. Pour the boiling liquid over the vegetables in the bowl.
  4. Cover and let the mixture sit at room temperature for 2 hours.
  5. Drain the liquid from the vegetables.
  6. Transfer the vegetables to a sterilized jar.
  7. Pour olive oil over the vegetables in the jar.
  8. Seal the jar tightly and refrigerate for at least 24 hours before serving.
